Catering for all the family and all our dieting can be tricky, but I love how much I have experimented and learnt all the while. Clean healthy foods and meals doesn't mean you have to miss out. Here's my recipe for a creamy delicious Vegan Potato Bake inspired by Chef Cynthia Louise.

INGREDIENTS: Potato (white and or sweet potato)
Mushrooms
Onion
Garlic
Cashews
Any desired veggies or other ingredients you prefer
Salt and pepper
Mixed herbs
Paprika
METHOD:
*preheat oven 180-200
1. Thinly slice the potatoes,mshrooms onion and crush garlic and add into one big bowl
2. Add salt, pepper and herbs
3. Blend cashews with water them until really smooth and creamy
4. Pour over ingredients and mixed in really well with your hands to cover everything in the cream
5. Evenly put in over dish and squish down with your hands again
6. Sprinkle paprika on the top
7. Cover with foil and bake for 40-45
8. ENJOY!
